- 1 ½ lb/680 g parsnips

- 1 lb/450g lamb mince
- 1 large yellow onion

- 1 cup/250 ml beef stock
- 2 Tbsp Worcestershire sauce
- 1 Tbsp tomato puree
- Seasoning:
- Salt and pepper

- Cook the Root Vegetables: Bring a medium saucepan of salted water to a boil. Add the parsnips and potatoes, and cook for 15 minutes, or until fork-tender. Drain and set aside to dry for 10 minutes.
- Brown the Lamb: Heat olive oil in a skillet and brown the ground lamb thoroughly for 5-7 minutes. Season with salt and pepper.
- Sauté the Aromatics: Add the onion, carrot, and about 2 teaspoons of thyme leaves to the skillet. Cook, stirring occasionally, for another 5 minutes, or until the onions are translucent and the carrots are tender-crisp.
- Simmer the Filling: Stir in the beef stock, Worcestershire sauce, and tomato puree. Lower the heat and simmer for 15 minutes to allow the flavors to meld.
